This spirit, made from sugar cane, is rum, which originated in the Caribbean. It is produced by distilling sugar cane and was originally called rum only when it came from this area.
The production of rum
At Borsuttogo, we strive to present not only wines but also spirits from all over the world, so if you are looking for something special, you should also have a look at our offer in this category. At one time rum was extremely valuable and was even accepted as currency. Many people would never think of it as anything other than a cocktail ingredient, but it’s worth considering.
Rum does not have a well-defined and regulated production process, as it depends mainly on the traditions of the area. It is made from the molasses left over from the cane sugar production or directly from the juice of the cane, which is fermented and then distilled.
Fermentation can take from 1-2 days to 5-10 days. The molasses or cane juice is diluted with water and yeast is added. This is a very crucial process, as the substances responsible for the primary character of rum are produced during fermentation.
Fermentation is followed by the distillation process. The main task here is to separate the water from the alcohol. It is during the pre-distillation process that the aromas that will characterise the finished drink are released. The master distiller is in control of the whole process and uses his great knowledge to shape the main characteristics of the drink. After distillation, the finished drink is still mostly clear, and is then matured in oak barrels to give it its final colour. Sometimes it is coloured with caramel, which gives it a smoother texture and a softer taste.
The special Barril rum
Barril rum, which is also part of our range, comes from the Caribbean, just like the rums it is based on. This rum is made from four different types of sugar cane spirit, four different distillation processes, aged for a minimum of five years and a maximum of eight years, and matured in bourbon oak barrels.
The careful blending results in a perfect harmony, a balanced rum from Panama, Nicaragua, Barbados and the Dominican Republic.
The main emphasis in its production is on consistent quality, so care is taken to ensure that the right proportions of each spirit are blended. Barril rum has a deep and intense flavour and is natural and pure, with no added sugar or spices.
The individual bottles are given a new life in a small factory near Hamburg, where they are filled and individually labelled by hand. At 42% alcohol, it is an excellent choice on its own or as a cocktail ingredient.
Classification of spirits made from sugar cane
We can categorise them according to their maturation, and we can talk about white, brown and golden rums.
Shorter-aged white rums are known to be excellent cocktail bases. Their alcohol content is typically lower, between 37.5% and 40%.
Golden rum is also used primarily in cocktails. It has a longer maturation period than white rum, typically around a year.
Brown rum is also suitable for drinking on its own, it is dark and full-bodied. It is also an excellent base for cooking and is a popular flavouring for dishes.
Whether you want to use it in the kitchen or drink it on its own, it’s worth getting to know this special world of spirits! If you want to know more about rums, please contact us!
