Cava - What is it and why do we love it?

If you have tasted Spanish wines, you will know how best to describe them: exciting and full of character. The same is true of this particular Spanish sparkling wine, with the added bonus that it is top quality, fresh and very memorable. This is Cava.

How is Cava different from champagne? What should it be served with? Which Cavas should be tasted when? Read our blog to find out!

A small winery… How Cava is made!

Cava is made from indigenous grapes, and in most cases the wine is based on three local grape varieties:

  • Macabeo – gives softness, freshness and fruitiness to the wine.
  • Parellada – a grape variety of elegance, favoured by the high altitude production areas of Catalonia
  • Xarel lo – which gives character, aroma and body to the drink.

Six other grape varieties can be used to make Cava, such as Chardonnay or Garnache.

At Borsuttogó you will find elegant dishes from Villa Conchi Cavák. The harvest at Villa Conchi runs from the end of August to the end of October. The grapes are harvested by hand at night to avoid the high temperatures that can cause premature fermentation. After rapid transport, the grapes are cooled to 10 degrees immediately on arrival to prevent the skins from staining the must. After must pressing, each variety is fermented separately at a constant temperature of 16 degrees Celsius, so that the wine retains its primary aromas.

The musts are then blended and bottled with the base wine. The yeast and sugar are added – and voila, the bubbles in the wine that make us love it so much! For the second fermentation, the bottles are stored in underground cellars at 15-17 degrees Celsius. The wine is then left in the bottles for at least 12 months before being dergassed and liquefied.

What should I use Cava with?

A perfect aperitif on its own, we can recommend it with confidence for a wedding, a family event or a company dinner. And to complete its multifunctionality, it will also be the perfect accompaniment to seafood and fish dishes.

With its oysters and seafood, we could not recommend a better drink than Cava Reserva, which scored 92 points from wine critic James Suckling. This is a truly complex and traditional wine from the Villa Conchi family, and one that really should be reserved for special occasions.

Villa Conchi Cava Brut Imperial 2013 – Only the best

This unique batch was voted Cava of the Year in Spain in 2017 – and for good reason. At once light yet deep and balanced, the fruity freshness reveals notes of lime and apricot. This speciality, rated 92 points by James Suckling, is a champion in our country too!
